Healthy Minestrone Soup

Fast and Easy Minestrone
This recipe is by Suzanne Somers
It is a Carbo meal with Almost Level 1 (if you are doing her program)

1medium onion, diced
3 (14 oz.) can, chicken broth
4 cloves garlic, minced
28 oz. can diced tomatoes
15.5 oz. can garbanzo beans, rinsed and drained
15.5 oz can red kidney beans, rinsed and drained
2 cups fresh kale, swiss chard, spinach or watercress
1 cup whole wheat small pasta noodles
1tsp. italian seasoning
1/4 tsp. dried rosemary
1/4 tsp. red pepper flakes
salt & pepper

In a large saucepan, cook onions in 3/4 cup broth over medium-high heat until onions ae translucent, about 5 minutes. Add another 1/2 cup broth and garlic. Cook 5 minutes more. Stir in tomatoes, the rest of the broth, chick peas, kidney beans, greens, pasta, italian seasoning, rosemary and red pepper flakes. Bring to a boil. Reduce heat. Cover and simmer 10-12 minutes, or until pasta is tender. Season with salt and pepper before serving.
