I just read Mary Jane's Outpost by Mary Jane Butters. (Have you heard of her? You would love her stuff. Go to maryjanesfarm.com.) She had a whole section on backpacking recipes centered around quinoa. A seven day menu of breakfast, lunches, and dinners features quinoa as the basic ingredient for each with different seasoning and topping mixes to keep it from being boring. It looks like it would be simpler to prepare (before the trip and during), lighter weight, and much healthier than many backpacking menus or pre-prepared mixes. We're going to try the recipes at home and then maybe plan a backpacking trip using her menu. You'll love this book, Andrea. She has so many great ideas and gorgeous photography to go along with them.
